PURPOSE:To prepare an air-containing processed meat food resistant to burst during heating and shrinkage after cooling and giving soft and light feeling to the palate by whipping kneaded meat to include air into the meat and heating the whipped meat after forming. CONSTITUTION:The objective air-containing processed meat food is prepared by adding hydrolyzed soybean protein during the kneading and whipping of meat to include air into the meat, forming the whipped meat mixture and heating the formed product. Preferably, nonhydrolyzed soybean protein is added to the meat to prevent the separation of juice or fat such as broth in heating. |
