PURPOSE:To prepare salmon roe having proper hardness, elasticity, good taste and flavor, by drying fish roe seasoned with salt at low temperature under airing,dehydrating it, regulating its salt content independently of the state such as the freshness of the raw material roe or its aging degree. CONSTITUTION:Washed fish roe such as salmon roe, trout roe, etc. is soaked in a saturated solutionof salt or a solution of salt with a proper concentration for a short time, it is seasoned with salt by sufficient stirring, and it is then dried and dehydrated preferably at 5-27 deg.C under airing. |
