PURPOSE:To recover an alcohol and obtain the alcohol of high quality continuously, by feeding a saccharide assimilable by a strain deficient in the respiration of a yeast of the genus Saccharomyces continuously or intermittently to a culture medium, and carrying out the alcoholic fermentation of the saccharide. CONSTITUTION:A basic culture medium containing blucose, fructose, etc. is fed to a fermenter 3, and a yeast culture prepared by cultivating a strain deficient in the respiration of the genus, e.g. Saccharomyces cerevisiae No.52, separately is added to the fermenter 3 to start the cultivation. A given amount of air is passed through the fermenter 3 by an air compressor 1, and a valve 2 is adjusted to keep the average alcoholic concentration in the culture fluid at 10-100ml (culture fluid)/hr or less. Air containing steam, produced alcohol, etc. is led to a condenser 6, cooled by a refrigerant 8 to give the aimed aqueous solution of the alcohol. The saccharide is analyzed periodically and fed from an introductory port 5. |
