PURPOSE:To obtain the title food product like yogurt which has marrow smell and taste, high nutrition and shows efficacy such as hypotension, antiviral or the like by mixing a starter which is prepared by using edible fungi to low-fat milk. CONSTITUTION:(A) (i) low-fat milk is sterilized, preferably heating at 80 deg.C for 30 minutes, and homogenized by stirring. In the meantime, naturally dried edible fungi are dipped in water, preferably at 40 deg.C for 1 hour and admixed to the component (i) in an amount of 5wt.% and finely crushed with a crusher. Then, the product is allowed to stand, preferably at 40 deg.C for 8 hours, then cooled down to 0 deg.C to give the starter. Then, (B) a low-fat milk such as animal milk is sterilized and homogenized at 80 deg.C for 30 minutes, then adjusted to 40 deg.C, combined with 3wt.% of the component A (starter), then allowed to stand for additional 8 hours for aging. Thus, the subject food product is obtained. |
