PURPOSE:To prepare the subject, low fats, low calorie and cholesterol-free food having a soft taste and texture by adding a vinegar, a juice, vegetable fats and oils, vegetables, etc., to a bean milk heated at a specific temperature for a specified time and subsequently homogeneously emulsifying the mixture. CONSTITUTION:A bean milk is heated at 75-100 deg.C for 10min and preferably mixed with cyclodextrin to remove the smell of the bean milk. The treated bean milk is mixed with a vinegar, a juice and a kind of more of vegetables, stabilizers, emulsifiers, saccharides, seasonings spices, coloring agents, flavors, etc., and gradually with vegetables fats and oils, followed by emulsifying the mixture to prepare the objective food. |
