摘要 PURPOSE:To prepare a food flavor-increasing agent used for increasing the flavor of the food and for improving the texture thereof by culturing the mycelia of a basidiomycete in a medium containing a raw material prepared from a Gramineae plant, drying and pulverizing the prepared cultured product and adding the dried powder to a food. CONSTITUTION:The mycelia of a basidiomycete [preferably shiitake (a mushroom)] is cultured in a medium containing a raw material (preferably bagasse) prepared from a Gramineae plant. The prepared culture product is ground and dried with hot air of 40-90 deg.C while being self-digested, thus providing a pulverized food flavor-increasing agent (preferably 60-300 meshes). The increasing agent is preferably added to a food such as bread in an amount of 1-10wt.%.
