1298392 Preserving liquid foods KIKKOMAN SHOYU CO Ltd 4 March 1970 10293/70 Heading A2D Liquid foods having an acidity of at least 0.05 normal are preserved by decolorizing melanoidins which are present in the foods, said decolorization being carried out by contacting the foods with one or more of the metals Al, Mn, Mg and Zn so as to permit dissolution of these metals as ions into the liquid foods. The metal may be added as a dispersion to the food, any unreacted metal being later removed by e.g. filtration. Formed metal ions may subsequently be removed by electrolysis or by the use of an ion exchange resin. The decolorization may alternatively be carried out either by coating the metal onto the inside surface of a container, which surface may be previously lacquered, or impregnating the metal in a plastics film and coating this film on the inside surface of a container, or by utilising the metal in foil form and inserting the foil into the liquid food. Examples illustrate the treatment of soy sauce, fruit juice and wine. |
