摘要 1387117 Moulding fish portions UNILEVER LTD 8 May 1972 [14 May 1971] 14929/71 Headings A2B A2D and A2U A moulded fish product comprises pieces of filleted, salted fish held together by a binder derived from finely divided raw fish muscle mixed with from 1 to 10% sodium chloride and from 3 to 8% food grade phosphate, both expressed in terms of wet weight of the finely divided muscle. A process for making the product consists in contacting raw fillets with salt to provide fillets containing from 3 to 20% salt expressed on a wet weight basis, coating the salted fillets with from 5 to 50% by weight of the binder, and moulding the coated fillets into blocks. The process may be applied to trout, salmon, saithe, or to any white fish, including cod and haddock, or any shellfish, and the product may be hot or cold smoked to provide smoked trout or salmon or seelachs (smoked saithe). The phosphate employed may be sodium pyrophosphate or tripolyphosphate. The moulded blocks may be frozen, or the moulding may be effected by freeze moulding, and the product then sliced. Smoking may be effected before or after slicing.
