PURPOSE:To inexpensively prepare the subject peptide by adjusting the pH of a milk raw material containing kappa-casein glycomacropeptide to a specific value and subsequently subjecting the treated raw material to an ultrafiltration treatment and a concentration treatment with an ultrafiltration membrane having a prescribed fractionation mol.wt. CONSTITUTION:A milk raw material (e.g. cheese whey or whey protein concentrate) containing kappa-casein glycomacropeptide is dissolved in water and adjusted to a pH of <4 with hydrochloric acid, etc. The adjusted solution is subjected to an ultrafiltration treatment using an ultrafiltration membrane having a fractionation mol.wt. of 10000-50000 to give a penetration solution. The penetration solution is concentrated with an ultrafiltration membrane having a fractionation mol.wt. of <=50000 to give the kappa-casein glycomacropeptide. The kappa-casein glycomacropeptide useful as a food raw material for preventing obesity, an infection preventing agent against influenza virus, etc., can be thereby prepared readily in a large amount in a high purity. |
