PURPOSE:To obtain frozen fruits with reduced pulp cracks by freezing the fruits after they are kept in vacuum. CONSTITUTION:Frozen fruits are produced by freezing them after they are kept in vacuum. The process for vacuum treatment is an effective one for evaporating the moisture corresponding to the volume expansion accompanied by the phase conversion from water into ice without deterioration in fruit freshness. The pressure in the vacuum treatment is less than 5Torr, preferably less than 1Torr. In the vacuum treatment, usual vacuum system or vacuum cooling system or the like can be used in addition to freeze vacuum drying system. |
