PURPOSE:To obtain a KONJAK (paste made from the starch of the devil's tongue) capable of quickly absorbing soup when immersed in a soup to enable quick serving by adding the content of an egg to glucomannan, stirring the components and coagulating the mixture under heating. CONSTITUTION:The pretreatment of the present process is the same as that of conventional process comprising the washing of the tubercle of devil's tongue with water, sterilization and crushing of the tubercle, extraction of glucomannan in water stream. and mixing and stirring of a proper amount of refined glucomannan powder with water to obtain a viscous substance. The content of an egg is mixed to the viscous substance and the obtained mixture is thermally coagulated and formed in the presence of a calcium agent. The egg used in the above process is raw egg, a soft-boiled egg or a mixture of raw egg and a boiled egg. Only the content of the egg is used in the present process and the egg shell is discarded. |
