The invertable confectionery mould (1) provided with a plurality of mould cavities (2) is shown in the inverted or confectionery item ejecting position, in Fig. 4. The base of each cavity (2) is penetrated by a passage 4 closable by an annular seal (22) around the head of a plunger (7). A head (64) of a seal housing (56) is used to depress the plunger (7) mechanically to the open position shown whereby compressed air can flow along a hose (61), a central bore (59), a laterally-extending slot (60), holes (28) in a disc (27), and the passage (4) to enter the cavity (2). The introduction of the air assists the mechanical force applied to the plunger. Use of the compressed air to assist mechanical ejection of the confectionery item is not essential but is preferred. Alternatively, by cutting back the heads (64), the plungers (7) can be opened by air pressure alone.
