PURPOSE: To improve unpleasant smell and taste and to obtain a seasoning matching to European taste by using fenugreek for soy sauce or fish sauce. CONSTITUTION: For example, (A) 10 to 85% of soy sauce consisting of 0 to 80wt.% soy sauce and/or 0 to 70% fish sauce, (B) 5 to 20% salt, (C) 0 to 80% water are mixed with (D) 1 to 30% granular fenugreek seed to improve the taste of a seasoning. Further, preferably, lovage root, celery leaf, tamarind powder, citric acid, yeast extract, glutamate may be added. |
