PURPOSE:To sterilize food or agricultural product in which fungi may grow without deterioration of quality by maintaining it at a prescribed temperature under a certain pressure for a prescribed time. CONSTITUTION:The food product in which fungi must not grow such as Japanese or Western sweet cakes, a variety of foods, agricultural products are sterilized by treating them under conditions at 10 to 100 deg.C, preferably 20 to 70 deg.C and 500 to 10,000kg/cm<2> pressure for 5 minutes to 5 hours, preferably 10 minutes to 2 hours. |
