PURPOSE:To obtain the title jelly rich in color feel by mixing dried and ground seaweed <=5wt.% in water content with a powdery raw material to be gelled. CONSTITUTION:Seaweed with color tempting appetite such as 'wakame', 'tosakanori', 'hijiki' or 'suginori' is desalted and dried in a hot air stream until its water content reaches <=5wt.%, and then ground into ultrafine pieces using a hammer crusher. The resultant pieces are incorporated in powdery raw material to be gelled such as water-soluble carrageenan. Thereby, the objective naturally colored instant jelly can be obtained by simply adding an appropriate amount of hot water to the above mixture followed by stirring. |
