Device for reversing the direction of movement of a sheet (4) of dough leaving a pair (3) of rolls, said device being formed by a conveyor belt (11) guided over at least one roll (16) positioned near a discharge conveyor (6) and over at least one roll (12) provided in a framework (8) being supported such that it is movable between two end positions. At least one of the rolls (12), in one of the end positions of the framework, being positioned close to the sheet (4) hanging downward from the nip between both rolls (3), said roll (12) passing below the rolls (3) when the framework (8) is moving to its other end position, such that said sheet (4) is picked up by said conveyor belt (11).
