It incorporates a metering-out sector 1, a pasteurization sector 2, a bag-forming and packaging sector 3 and a refrigeration sector 4, which are arranged in vertical, downward alignment. The supply sector 1 discharges the olives, metered out, over vessels 8 mounted on the periphery of a circular support plate 20, and they are placed in a tank of hot water 23, also of circumferential trajectory, there being, underneath, a second plate 20 with the same vessels and circumferential tank, and under this one a third one and so on in succession until a path is achieved for each metered amount of olives which is sufficient to ensure their complete pasteurization, each metered amount being transferred from one pasteurization level to the one immediately below by means of tipping- over of the vessels over a funnel 25 which tips into the lower vessels 8. For its part, the refrigeration sector 4 has a drum 38 with radial scoops 40 to which the bags 36 gain access, this drum rotating within a flattened tank 41 and the bags being expelled laterally, after they have been refrigerated, by means of an expulsion mechanism 47. <IMAGE>
