NEW MATERIAL:Inulinase having the following physicochemical properties. Action: when acted with inulin, the beta-2,1-fructoside bond is cleaved and immediately an intramolecular rearrangement reaction is caused to produce a ring inulo oligosaccharide in which 6-8 fructose molecules are combined to form the beta-2,1-fructoside bond; substrate specificity: the inulinase specifically acts on beta-2,1-bonded fructose polymer having a polymerization degree of >=8 but does not act on a beta-2,6-bonded fructose polymer, levan; optimum pH: 7.2; stable pH region: 6.5-8.5; optimum temperature: 4.5 deg.C; stable temperature region: <=50 deg.C. USE:An enzyme capable of preparing multi fructose ring compounds from the inulin. PREPARATION:A Baccilus bacterium such as Bacillus.circulans MZ No.31 (FERM P-9943) is cultured in a medium containing a fructose polymer. |
