PURPOSE:To obtain the title food processing auxiliary agent having effect improving flavor of food by crushing a vegetable humus mud containing a specific amount of water content, activating the mud and filtering an extracted liquid obtained by extracting the activated mud with water to remove the solid content. CONSTITUTION:A vegetable humus mud having 50-80% water content is crushed and the crushed mud is activated by sufficiently bringing the mud into contact air and an extracted liquid (normally having pH <=3 and >=0.4 Brix degree) obtained by dipping the activated mud into a warm water and stirring and filtering the activated mud is subjected to two step filtration consisting of industrial filtration and filtration by membrane filter having 0.5mu pore size to provide the aimed food processing auxiliary agent. |
