The knitted fabric structure for filtering applications, particularly in the food industry such as for extracting fruit juices, is made up of at least one monofilament and/or multifilament strands in the knitted layer. Pref. at least knitted layer is of monofilament and multifilament strands, where the monofilaments are knitted in after a given number of multifilament strands. A ground strand is used for the knitted layer in the form of a plated strand with a number of feed strands, or as a covering strand together with a bonding strand. The knitted material can be in a number of layers, where the outer layer is of multifilament strands and the inner layer is of monofilaments, or vice versa. Polyester can be used for the monofilaments and the multifilaments, or the monofilaments are of V4-A steel and the multifilaments of polyester, or the monofilaments are of polyester and the multifilaments are of polypropylene. Other recommended materials for the strands are glass, Keflar (sic) (RTM), PTFE or mixtures such as with polyester or polypropylene. An additional reinforcement strand is inserted at the ends of the knitted structure to hold fastenings in place, leading freely between the ends of the material, and cut back close to the reinforced ends of the fabric.
