摘要 |
PURPOSE:To obtain a cyclic inulooligosaccharide comprising many fructose molecules by treating inulin with an enzyme which catalyzes the production of a specified cyclic oligosaccharide. CONSTITUTION:A cyclic inulooligosaccharide in which 6-8 fructose molecules form a ring structure is obtained by treating inulin with an enzyme which catalyzes the production of a cyclic oligosaccharide comprising 6-8 fructose molecules by intramolecular rearrangement by acting upon a beta-2,1-bonded fructose polymer of a degree of polymerization >=8 or a microbe which can extra- cellularly produce this enzyme. An example of the microbe which produces the enzyme in the production of the cyclic inulooligosaccharide is Bacillus circulans MZ No.31 (FERM-P9943). The obtained cyclic inulooligosaccharide is a mixture of the oligosaccharides of degrees of polymerization of 6-8. The composition varies according to the conditions of the enzymatic reaction and falls within the range of 50-100% saccharides with an 6, 0-50% saccharides with n of 7 and 0-20% saccharides with n of 8. |
