The dough is conveyed on a conveyor belt (1) above which a sensor (3) is located. The sensor reciprocates in a horizontal and transverse direction above the dough. The sensor emits light and senses its reflection from portions on the dough surface at each of the measuring points, equispaced from each other by a set distance. At each measuring point the sensor transmits an electrical signal to a computer. upon receiving the signals, the computer calculates the height at that point and multiplies it by the incremental distance to obtain a finely divided sectional area of the dough from which a weight of dough per unit length may be derived.
