The invention relates to a process for controlling the softening of cultivated plant tissues caused by an excess of nutrients and, in particular, of nitrogen. This process is characterised in that, by virtue of an introduction of CO2/H2CO3 in the aqueous phase, the metabolism of the plant is reinforced and the nitrogen compounds stored in the plant and not used for material exchanges are decomposed, with a simultaneous removal of the influence of the acids which are formed by SO2 and which act on photosynthesis.
