PURPOSE:To decrease two thermal sterilization steps to one step and to sterilize the yeast and putrefaction bacteria without deactivating the enzyme in Japanese rice wine by generating a high-voltage pulse in the Japanese rice wine. CONSTITUTION:Yeasts and putrefaction bacteria in Japanese rice wine are sterilized by generating a high-voltage pulse having an electric field strength of <=20KY in the Japanese rice wine. |
