The starting material is "Saccharomyces cerevisiae" strain or "Saccharomyces carlsbergensis" strain yeast, or a mixture of these two yeast strains. The yeast is subjected to a physicochemical treatment of bursting of the yeast cell wall by heating to a temperature above 72 DEG C for at least 20 minutes in the presence of sodium chloride, mixed with the yeast in a proportion of 2.6 to 10% of sodium chloride, followed by a second treatment in which 2.6 to 10% of a phosphoric or phosphorous salt or of a mixture of such salts, or of phosphoric or phosphorous acid or anhydride, is added to the lysate of burst and saline-treated yeast cells.
