PURPOSE: To obtain pudding to which aspartame has stably been added without adding acidity by mixing an aq. mixture of components of pudding with an aq. mixture of an acidic food with aspartame so that a specified pH is attained and carrying out aseptic packaging. CONSTITUTION: The components of pudding except aspartame, water and a thermolabile water-soluble component are prepd., uniformly mixed, sterilized at a low temp. and cooled. The resultant mixture is then mixed with an acidic aq. soln. contg. aspartame, water and milk protein mixed in a ratio of (33-50):1 and having 82-88wt.% water content after passing through an aseptic filter so that pH5.3-5.9 is attained and aseptic packaging is carried out to obtain the objective pudding using aspartame as a sweetener and having reduced calorie. |
