PURPOSE:To decompose the whole body of a fish or shellfish as such into a liquid at room temperature to provide a fish extract suitable as a raw material for seasonings or healthy foods by immersing the fresh body of the fish or shellfish in a diluted acetic acid aqueous solution to digestively decompose the body. CONSTITUTION:The objective fish extract is prepared by immersing the fresh body of a fish or shellfish (e.g. mackerel, sardine or Pacific saury) in a diluted acetic acid aqueous solution (preferably having a concentration of 3-6%) to digestively decompose the body. The temperature of the immersion is preferably 0-40 deg.C. |
