Method of keeping a liquid 3 out of contact with air in a partially full container 4, into the empty internal space of which there is inserted a pouch 2 made of flexible material, characterised in that, on the one hand, the said pouch 2 is filled advantageously with a fluid at excess pressure, such as air in particular, and, on the other hand, in that the said pouch 2 is kept in contact with the free surface of the liquid 3 by appropriate means 5, 8 which are firmly secured to the container 4. The method according to the invention and the preservation device resulting from it are particularly intended for the preservation of a liquid, contained in a partially full container, out of contact with air and particularly when this liquid is a sparkling wine contained in any type of bottle. <IMAGE>
