PURPOSE:To obtain enriched polished rice and enriched polished wheat with their nutrient sources slightly to be released and to be washed away during cleaning, by attaching a nutrient to polished rice granules or polished wheat granules, covering them with fats and oils or wax to be melted under heating, coating them with a coating agent comprising starch as a main agent. CONSTITUTION:A nutrient[e.g., water-soluble vitamin (vitamin B1, vitamin B2, vitamin C, vitamin B6, nicotinic acid, pantothenic acid, etc.), fat-soluble vitamin (vitamin A, vitamin D, vitamin E, etc.), amino acid (e.g., lysine, etc.), minerals (calcium, iron, etc.)]is added or attached to polished rice granules or polished wheat granules, the granules are covered with fats and oils (e.g., soybean oil, beef tallow, lard, etc., hardened oil obtained by hydrogenating it) and/or wax (e.g., bees wax, etc.) to be melted under heating without being melted and they are coated with a coating agent comprising starch (e.g. potato starch, wheat flour, etc.) as a main agent, to give enriched polished rice or enriched polished wheat. |
