PURPOSE:To produce KONJAK (paste made from starch of devil's tongue) having desirable flavor and improved taste in addition to the highly suppressed KONJAK smell, by adding a polysaccharide produced by microorganism to the raw material of KONJAK. CONSTITUTION:A polysaccharide separated from the mycelia or cultured product of basidiomycete belonging to Schizophyllum genus is added to the raw material of KONJAK in an amount of 5-30wt%, and KONJAK is produced from the mixture by conventional process. |
