PRODUCTION OF MARBLED EDIBLE MEAT

摘要

PURPOSE:To obtain marbled meat free from efflux of drip such as injected fats and oils, blood or humor by emulsifying fats and oils and chitosan into water and injecting the emulsion into meat. CONSTITUTION:Water and fats and oils such as liquid beef tallow are blended with 0.05-5 pts.wt. based on 100 pts.wt. fats and oils of chitosan and emulsified to prepare an emulsion, which is injected into edible meat by using an injector.
