PURPOSE:To obtain a material for anti-obesity food having lower digestion and absorption rate than conventional grain by bonding a saccharide to starch in grain. CONSTITUTION:Starch preferably in a fine powdery state prepared from rice, maize, potato, etc., is blended with one or more saccharides selected from monosaccharide and oligosaccharide usually used for food and an acid such as hydrochloric acid, phosphoric acid, succinic acid or citric acid and adjusted to <=20wt.% water content. Then the prepared mixture is treated at high temperature of 50-250 deg.C to give a material for food wherein the saccharide except D-glucose is bonded to the starch or the saccharide in the form except alpha-1,4 bond and alpha-1,6 bond is bonded to the starch. |
