PURPOSE:To facilitate impartment of smooth texture by dissolving an aggregate of protein particles containing >=95% particles having <=8mu particle diameter in an aqueous solution of sodium dodecyl sulfate in a specific concentration and preparing a protein composition. CONSTITUTION:An aqueous solution of a protein is heated to agglomerate and coagulate the protein and free liquids are then removed from the resultant product. Formed lumps are subsequently loosened to prepare a protein composition. The resultant protein composition is an aggregate of protein particles containing >=95% particles having <=8mu particle diameter and the protein particles are dissolved and transparentized in an aqueous solution of sodium dodecyl sulfate (at pH10 containing 3mol/l urea) in 0.5% concentration. Typical examples of the protein include egg white consisting mainly of ovalbumin, lactalbumin, soybean protein, blood plasma protein, etc. |
