PURPOSE:To racemize serine selectively without requiring high-temperature high- pressure treatment and without deactivating coexisting enzymes, by using a culture of a bacterium belonging to the genus Aeromonas, its culture mold or its extract. CONSTITUTION:A bacterium such as Aeromonas punctata subspecies caviae MT- 10243(FERM BP-21) belonging to the genus Aeromonas is cultivated under aerobic conditions to give a culture. In the presence of the culture, culture mold or extract from the culture mold, serine is racemized in an aqueous solution at 20- 50 deg.C in a pH of 5-11. |
