<p>Process for segmentally cutting portions of circular food products, such as cakes, cheeses and the like, characterised in that it consists in producing a small diameter hole (10) in the centre of the said circular product (2) using a tubular sonotrode-cutter (1), then in carrying out the cutting into segments with the aid of any appropriate slicing device.
