PURPOSE:To obtain pickle having durable appearance and taste and excellent food sanitation in a short time by immersing a food material in a seasoning solution for pickle in a pressure container, supplying an inert gas to the container and pressurizing the material at low temperature. CONSTITUTION:A food material is immersed in a seasoning solution for pickle in a pressure container, an inert gas such as nitrogen gas or carbon dioxide gas is fed to the container while maintaining the inner temperature at ice point<=-<=15 deg.C under 1-10kg/cm<2> to give pickle having excellent color and qualities. |
