The invention relates to a new method of preserving grain and starchy foods. It consists in placing them in a hermetically closed preservation chamber 1 and from which, by means of a sucking and forcing pump 3, the air is sucked as much as possible and then replaced with an inert gas coming from a gas reservoir 4, joined to the chamber 1. This gas remains mixed with the grain and starchy foods during the entire period of preservation (10 years or more). In order to add or withdraw from these items, the inert gas is first withdrawn from the chamber 1 by means of a pump 3, and pressed into the same reservoir 4, then air is allowed to enter into the chamber, after which the door 2 of the chamber 1 can be opened. As a result of the complete lack of oxygen inside the preservation chamber: - it is impossible for any rodent or insect to exist; - it is impossible for spontaneous explosions to occur. This method also permits the use of the same quantity of gas an infinite number of times, and consequently no pollution of the surrounding air occurs as a result. <IMAGE>
