Devices which can be used on automatic machines for scraping fermented dough balls before they are inserted into the oven and very particularly on the automatic incising machine. These devices make it possible to obtain scarifications 19 of all shapes and of even depth 4 and to resolve the delicate problem of cleaning the cutting tools 3. The abovementioned results are obtained by the simultaneous use of a cutting disc rotating very fast, flanked with two cleaning brushes and carried by a drawer 1 moving in the groove 2 which is hollowed out of the moving piece 9 under the effect of the roller 7. When 9 moves under the effect of an actuator, the roller 7 follows the line of the path 8 and therefore imparts a five-axes movement (3 displacements, 2 orientations) to the disc 3. These devices may be mounted on the various machines which currently equip the manufacturing lines in industrial bakeries or craft workshops. <IMAGE>
