The invention relates to the manufacture of a deep frozen product comprising a base made from raw or cooked pastry or dough covered by a topping. According to the method, there is placed over the precut pastry or dough base 6, a covering mould 10 having a central recess 20 so that the internal wall 15 is in contact with the top of the pastry or dough base 6; the topping 18 is poured into the recess 20 and the whole thing is deep frozen. Preferably, the covering mould 10 has a peripheral part whose shape and external dimensions correspond to the shape and to the internal dimensions of the packaging of the deep frozen product. The deep frozen product, for example a raw puff pastry tart or pizza with a cooked dough, comprising the pastry or dough base, its topping, and the covering mould, is ready to be packaged. <IMAGE>
