<p>PURPOSE:To remarkably reduce the investment cost by connecting a mold to an evacuation apparatus via a lid furnished with a pressure-reducing valve capable of closely fitting to one mold and evacuating the molds with the evacuation apparatus one by one. CONSTITUTION:A shell to be used as a container is formed in a mold 10. Other chocolate material tempered at a specific temperature is mixed with nitrogen gas, etc., and whipped at a high speed. The whipped gas containing chocolate material is poured and filled into the shell. A lid 13 is placed on the mold 10 and the mold covered with the lid 13 is transferred to the position of an evacuation apparatus 17 and connected to the evacuation apparatus via a pressure-reducing valve 15. The air in a space between the upper face of the mold 10 and the lid 13 is instantaneously evacuated and each mold 10 is transferred to a cooling stage. The lid 13 is removed and a chocolate same as the shell-forming chocolate is filled in the mold to cover the shell.</p> |
