摘要 PURPOSE:To obtain a lactic acid beverage, rich in oligosaccharides, vitamins B1 and B2, saponin, mineral, etc., and excellent in aroma, acid taste, etc., by carrying out lactic acid fermentation of soybean dipping water, a liquid containing glycudes in a process for producing bean curd, etc., when have been conventionally subjected to discarding treatment. CONSTITUTION:Lactic acid bacteria (e.g. Lactobacillus.plantarum) are added to soybean dipping water or a liquid, such as coagulation waste water of bean curd, etc., containing glucides in a process for producing the bean curd to carry out lactic acid fermentation and afford a lactic acid beverage. Furthermore, a functional membrane is used to filter the liquid, containing the glucides and formed in the process for producing the bean curd before carrying out the lactic acid fermentation of the above-mentioned liquid to remove proteins. Thereby, offensive smell and strange taste peculiar to soybean can be removed to produce the lactic acid beverage having aroma of good quality and refreshing acid taste. Thereby, labor for discarding treatment of soybean dipping water, coagulation waste water of bean curd, etc., can be reduced.
