PURPOSE:To enable production of boiled fish pastes excellent in flavor, etc., at a low cost by providing a construction in which raw materials can be heated with either or both of steam and far infrared radiation in one unit of heater for the boiled fish pastes. CONSTITUTION:A heater 2 for boiled fish pastes is provided with two sets of heaters with steam consisting of steam solenoid valves 3 and 5 and steam jetting nozzles 4 and 6 and two sets of heaters with far infrared radiation consisting of gas burners 7 and 8, combustion cylinders 9 and 10, flue tubes 11 and 12, auxiliary apparatus housing shed 13 and 14, etc., for housing auxiliary apparatus for driving and controlling the gas burners. Furthermore, bypass manual steam valve 15 for jetting also an adequate amount of steam into a heating chamber 2 in irradiation with the far infrared rays and regulating humidity in the heating chamber 2 even in irradiation with far infrared rays is provided. Boiled fish paste after passing through a gelling step is introduced into the heater 2 with a chain conveyor 1 and the heaters with the steam and the heaters with the far infrared irradiation are suitably used together to carry out production of the boiled fish pastes. |
