The invention relates to the production of moulds made from microperforated synthetic material, intended for the moulding and pressing of cheeses. A mould comprises a base 6, a collar 7 and a pressing "cap" 8 where appropriate. The set is obtained by producing universal microperforated plates 1 by injection, and then assembling these plates together by welding or by gluing. Large cheese moulds can thus be manufactured without too high an investment. <IMAGE>
