This invention consists in storing the butter in chilled chambers which are hermetically sealed. The air is then sucked out as much as possible and replaced by an inert gas originating from a gas reservoir joined to the abovementioned chamber. This gas remains mixed with the store of butter during the period of keeping of up to five years. This invention prevents any souring of or mould growth on the quantities in the store. In order to add or remove quantities of butter, the inert gas is firstly withdrawn from the chilled chamber by means of a pump, then pressed in the same gas reservoir, then air is allowed to replace the gas, after which the chilled chamber opens. This method permits the use of the same quantity of gas an infinite number of times and, moreover, it prevents any pollution of the air.
