Process and apparatus for the continuous treatment of vegetable products such as beans, in particular cocoa beans, seeds, cereals and the like and in particular for the sterilisation of these products. For this purpose, the material to be treated is continuously introduced, free from vapour pressure without locks, into a star feeder and is transported by this within a housing through zones of differing vapour conditions and is discharged again free from vapour pressure. A short-time high-pressure saturated steam treatment is carried out by the process with very low water absorbtion and thus a high degree of sterilisation and good peelability is achieved without impairment of the flavour and quality.
