PURPOSE: To convert >=1 gelling polysaccharide to a stable gel when desired by preparing a compsn. contg. the gelling polysaccharide which contains a microgel having an average. equiv. diameter below 100 μ, is fluid at a specific temp. and is capable of forming the reversible gel. CONSTITUTION: The fluid compsn. contg. the >=1 gelling polysaccharide of the amt. sufficient for forming the substantially soft reversible gel by imparting sufficient shearing force on the liquid contg. the gelling polysaccharides while cooling the liquid to its gelling temp. or below, then executing static cooling is prepd. This fluid compsn. is fluid at a tap. T, is softer than the gel formed after heating to the temp. exceeding the transition temp., then cooling down to the temp. T under static conditions and exists as the microgel in which the gelling polysaccharides have the average. equiv. diameter of 100 μ, more adequately <50 μ. |
