<p>The coating consists of a sublayer (1) made of an electrically conductive material, and a scraping means (2) secured to it and consisting of two spaced strips of abrasive material. As soon as the working organ with said coating applied on it starts moving, the tubers, for example potato tubers, start moving perpendicularly to the end-face surface of the metal sublayer. Under the influence of centrifugal forces they are pressed against the strips of the scraping means (2) and peeled by the sharp edges of the abrasive particules. While passing consecutively along all the abrasive strips the tubers are turned due to friction and peeled on all sides. At the same time, they push the peel of the preceding tubers away from the gaps between the abrasive particles. The potatoes peeled with the proposed coating have a smooth surface, which leads to decreasing the quantity of fat absorbed during the culinary treatment and to increasing the content of starch and vitamin C in the external layers of the tubers. At the same time, the quality of peeling and the productivity of the machine are increased.</p> |
