PRODUCTION OF SHEET-LIKE FOOD

PURPOSE:To obtain the title food with eating feel and flavor similar to those of whale or medusa by alkali treatment of a raw material comprising 'konjak' paste or its combination with starch paste to effect gelation into a sheet form which is then put to alkali elimination treatment followed by frying under specified conditions. CONSTITUTION:A raw material comprising 'konjak' paste or its combination with starch paste is put to alkali treatment to effect gelation into a sheet form. This form is then put to alkali elimination treatment followed by frying in an edible oil at 100-150 deg.C so as to result in 2-50wt.% in the lipid content in terms of crude fat, thus obtaining the objective food.
