PURPOSE:To obtain a jelly containing vitamins, capable of keeping the vitamins even if the vitamins are added to various foods or drinks, by reacting a low- methoxylated pectin with a polyvalent metallic ion, thereby forming a gelatinous film. CONSTITUTION:A jelly-forming solution containing about 1-1.5wt% low-methoxylated pectin is added with a proper amount of vitamins, and is brought into contact with a solution containing polyvalent metallic ion such as calcium ion, magnesium ion, etc. to obtain a jelly material. The obtained jelly is immersed in a hot solution containing polyvalent metallic ion for about 10-60min. |
