A b s t r a c t : The present invention relates to a process for producing a chocolate powder with improved properties as regards taste and dissolving behaviour, said process comprising - producing cocoa powder enriched with lecithin; - mixing the cocoa powder enriched with lecithin with ingredients like saccharose, dectrose, lactose and common salt, to a powder mixture; and - processing said powder to particles having a size bigger than 5 mm.
